Perfect Summer Smoothie

If you or someone in your family has allergies, then this smoothie can be a great way to have a super treat without triggering the allergens. It is free from dairy and gluten; though people who are allergic to cinnamon and peanuts should look elsewhere or find substitutes.

Ingredients

Here is what you will need to make this delicious smoothie:

A cup of coconut milk or almond milk

Half a tablespoon of honey

1 banana (if you freeze it, you can make the smoothie feel like ice cream)

Two tablespoons of peanut butter

A few crushed ice cubes

Two teaspoons of cinnamon

Preparation

You’ll want to start by blending the ice cubes and the milk together. Now, not all blenders can handle ice cubes. You definitely want to check your user manual to see if your blender can. Ice cubes can destroy your blender blades, if you try to use them in the wrong blender, so be careful with them.

If your blender isn’t made for ice cubes, then you can always smash them up separately and then just add them to your mix later, after everything else has been blended. Just wrap them up in a towel and smash them with a pan or hammer.

So, just blend the milk and cubes until they are frothy. Doing that part of the smoothie first will make the rest of it much easier to blend.

Then, chop up the bananas and add them to the peanut butter. Mix them up together before placing them in the blender. Then you can add in the rest of your ingredients. Once everything blended to the right consistency (which should only take a few minutes), you can taste test the smoothie to see if you need to add something.

Sometimes, I’ll add in a bit more cinnamon or some bananas to get the entire smoothie tasting like it should. You can add some other things to it, if you want to spice things up a bit. I find that serving with some honey grahams- either on the side or mixed in- is a great addition that adds a new texture and look.

Storage and Serving

You can store the smoothie in the fridge for a few days, or you can store it in the freezer for even longer. If you go the freezer route, just be sure to let it thaw out all the way before you try to serve it. Microwaving the smoothie isn’t a good idea, and neither is letting it sit on the counter to thaw. Always give yourself enough time to let it thaw in the fridge.

Of course, serving it fresh is the best way to get the most delicious taste from the smoothie. You may not always have that option, especially if you are making a large batch up for other people, but it is ideal. Once you have tried the smoothie for yourself, you may want to make some slight adjustments to future recipes to get it just the way you want it.
